Of course it’s always about great food and friendly, attentive service that’s provided in a clean, pleasant atmosphere and we strive for that in every dining experience. But how we do it is the real story…

Food Services of America (FSA) is a Northwest company and our primary food purveyor. We only use their finest product lines: Madrona and Signature Brands.

We are proud to embrace FSA’s SNOR philosophy of Sustainability, Natural, Organic and Regional as a central theme in our restaurant operations. With emphasis on sustainability, we Reduce, Reuse and Recycle.  That means we recycle card board, glass, metals, plastics, place mats and news paper instead of shipping it off to our land fills. Last year we began separating food preparation scraps (vegetable peels, meat trimmings etc) and patron leftovers from our solid wastes and giving it to locals who feed it to their chickens. These two efforts reduced our waste volume over 50% resulting in much less than 1 cubic yard of waste per week. Plus the chickens are reeaallyy HAPPY. We sell our used fry oil to a local bio fuel producer and coffee grounds go to locals to be incorporated into their gardens.

We have eliminated plastic and Styrofoam from our “to go” products and replaced them with eco friendly items such as Stalk Market’s to go containers made from 100% sugar cane fibers, cutlery made from potato starch and straws and bags made of corn polymer. These items compost in land fills in about 4 to 6 months versus 100 years for Styrofoam to break down. Our trash can liners are BIO TUFF brand made from corn polymer and these also decompose in about 3 to 4 months. We use green cleaning products, micro fiber cloths, and recycled/unbleached paper products.  And finally, ice water is provided on a request only basis.  The energy and fresh water saved by not automatically “watering” guests is significant and in keeping with our eco friendly philosophy.  If you want water, please just ask and we will gladly provide as much as you desire.  Want to know more?
